Chicken Fajita Wraps

Ingredients

    Diced Chicken Thigh 600g

    Red Onion – Sliced 300g

    Mixed Peppers – Sliced 300g

    10” Tortilla Wraps 10

    Cajun Seasoning To taste

    Olive oil For frying

    Diced Chicken Thigh 3kg

    Red Onion – Sliced 1.5kg

    Mixed Peppers – Sliced 1.5kg

    10” Tortilla Wraps 50

    Cajun Seasoning To taste

    Olive oil For frying

     

  • 100 Portions

    Diced Chicken Thigh 6kg

    Red Onion – Sliced 3kg

    Mixed Peppers – Sliced 3kg

    10” Tortilla Wraps 100

    Cajun Seasoning To taste

    Olive oil For frying

     

Method
  1. In a frying pan heat enough oil for frying, very hot
  2. Add the chicken to the pan
  3. Cook for 10 minutes or until the chicken is cooked through and achieves a temperature of 75˚C for 2 minutes
  4. Add the sliced vegetables
  5. Add the seasoning to taste
  6. Serve in the tortilla wraps

  • You could marinade the chicken in some oil and cajun spice to add more flavour to this dish
