Garlic and Herb New Potatoes

Ingredients

    Washed new potatoes 1kg

    Garlic – Diced 2 cloves

    Mixed Herbs To taste

    Salt To taste

    Pepper To taste

    Olive Oil To coat potatoes

    Washed new potatoes 5kg

    Garlic – Diced Half a bulb

    Mixed Herbs To taste

    Salt To taste

    Pepper To taste

    Olive Oil To coat potatoes

    Washed new potatoes 10kg

    Garlic – Diced 1 bulb

    Mixed Herbs To taste

    Salt To taste

    Pepper To taste

    Olive Oil To coat potatoes

     

Method
  1. Blanch new potatoes in boiling water for five minutes
  2. In a roasting dish, being careful not to add to many, add a layer of new potatoes
  3. Coat lightly with olive oil
  4. Season to taste
  5. Preheat the oven to 180˚C
  6. Roast the potatoes for 20 minutes, then add the garlic and return for another 20 minutes or until browned on the outside and tender in the middle
