Harira Soup

Ingredients

    Oil To fry

    Diced Onions 500g

    Garlic 4 cloves

    Turmeric 10g

    Cumin 10g

    Cinnamon 5g

    Diced Red peppers 200g

    Tomato base sauce (FFT recipe) 0.5 litres

    Paprika 10g

    Vegetable stock 1.5 litres

    Red lentils 200g

    Diced Carrots 400g

    Diced Sweet potato 400g

    Diced Celery 400g

    Fresh Corriander 30g

    Diced Red peppers 1kg

    Tomato base sauce (FFT recipe) 2.5 litres

    Paprika 50g

    Vegetable stock 7.5 litres

    Red lentils 1 kg

    Diced Carrots 2 kg

    Diced Sweet potato 2 kg

    Diced Celery 2 kg

    Fresh Corriander 150g

    Diced Red peppers 2kg

    Tomato base sauce (FFT recipe) 5 litres

    Paprika 100g

    Vegetable stock 15 litres

    Red lentils 2 kg

    Diced Carrots 4 kg

    Diced Sweet potato 4 kg

    Diced Celery 4 kg

    Fresh Corriander 300g

     

Method
  1. Heat the oil in a pan and fry the onions and garlic
  2. Add the spices, diced red peppers, diced carrots, diced sweet potato and diced celery and stir for a few minutes
  3. Add the tomato base sauce, vegetable and stock and simmer for about 45 mins
  4. Add chopped coriander just before service
