Homemade Chips

Ingredients
  • 10 Portions

    Potatoes – peeled and cut into chips 2.5kg

    Rapeseed oil For deep frying

     

  • 50 Portions

    Potatoes – peeled and cut into chips 12.5kg

    Rapeseed oil For deep frying

     

  • 100 Portions

    Potatoes – peeled and cut into chips 25kg

    Rapeseed oil For deep frying

     

Method
  1. Heat the oil to 130˚C
  2. Cook the chips until they are soft but not coloured – around 10 mins
  3. Leave to one side
  4. Increase the temperature of the oil to 180˚C
  5. Fry the blanched chips for 2 minutes or until golden and crispy
