Ginger Biscuits
Ingredients

Plain Flour 150g
Demerara Sugar 50g
Caster Sugar 50g
Margarine 100g
Baking Powder 10g
Ginger 2 tsp

Caster Sugar 250g
Margarine 500g
Baking Powder 50g
Ginger 2 tbsp

Plain Flour 1.5kg
Demerara Sugar 500g

Baking Powder 100g
Ginger 4 tbsp
Method
- Combine all of the ingredients in a planetary mixer on slow
- Once the dough has come together, turn the machine off – do not over mix
- Allow to rest in the fridge for 1 hour
- Roll out thinly and cut into rounds using a cutter
- Grease baking trays
- Place the biscuits allowing room for them to spread slightly
- Cook at 170˚C for about 10 minutes or until lightly golden
Key Points
You could double up on this recipe and roll into a large sausage shape to be frozen for future use.
