Onion Bhajis

Gram (Chickpea Flour) 100g
Garam Masala 1 tsp
Curry Powder 2 tsp
Salt 1 tsp
Pepper pinch
Onions 1 large
Cumin 1 tsp
Turmeric pinch
Fresh Coriander 15g
Lemon Juice ¼ lemon

Garam Masala 1.5 tbsp
Curry Powder 3 tbsp
Salt 1.5tbsp
Pepper 1 tsp
Onions 5 large
Cumin 1.5 tbsp
Turmeric 1.5 tsp
Fresh Coriander 75g
Lemon Juice 1 lemon

Gram (Chickpea Flour) 1kg
Garam Masala 3 tbsp
Curry Powder 6 tbsp
Salt 3 tbsp
Pepper 1 tbsp
Onions 10 large
Cumin 3 tbsp
Turmeric 3 tsp
Fresh Coriander 150g
Lemon Juice 2 lemons
Method
- Using a Robot Coupe slicer – slice the onions very thinly, add to a mixing bowl
- Combine the flour and the dried spices and salt
- Add to the sliced onions, add the lemon juice
- Mixing well slowly add water until the mixture forms a sticky batter
- Add chopped coriander
- Form into balls (using a small ice cream scoop)
- Drop balls into deep oil at 170˚C and cook until golden
- Drain and serve with chopped coriander sprinkled on the top
