Rich Chocolate cookies

Kerrymaid baking block 150g
Cocoa powder 50g
Granulated sugar 175g
Baking powder 0.5 tsp
Vanilla flavouring 0.5 tsp

Kerrymaid baking block 750g
Cocoa powder 250g
Granulated sugar 875g
Baking powder 2.5tsp
Vanilla flavouring 2.5tsp

Plain flour 1.4kg
Kerrymaid baking block 1.5kg
Cocoa powder 500g
Granulated sugar 1.75kg

Method
- Preheat the oven to 180c and line the baking trays with parchment paper
- Put the flour, cocoa powder and baking powder in a bowl and mix well, set aside
- In a pan, gently melt the baking block and remove from the heat, add the sugar, vanilla and egg and stir until combined
- Add the flourmix in batches and stir until combined well
- Use a small ice cream scoop or spoon to make balls the size of golf balls
- Place the balls on the lined trays with enough space between them to allow them to spread while cooking
- Bake for 8-11 minutes until the cookies are slightly set, not wet but soft
- Allow to cool until firm enough to handle
